When Scientists Meet Cowboys: An Animal-Free Camembert Cheese

At NoPalm Ingredients, we are excited to showcase the incredible results of collaboration and innovation. We've teamed up with Those Vegan Cowboys to create an animal-free Camembert cheese, using our sustainable yeast-based fat. This partnership and final product are a perfect example of how groundbreaking ingredients can drive the future of food with more sustainable solutions.

So, how does it taste? Our alternative fat offers the ideal solid fat, which was once included in the recipe of Those Vegan Cowboys’ cheese, resulting in a creamy mouthfeel and cheesy texture. Additionally, with its natural butter-like color, there's no need for added colorants, while its neutral flavor profile offers a high flexibility for ripened foods like camembert cheese.

This exciting collaboration is part of the PALM+ project, supported by the European Union and RvO through the Eurostars program. In addition to Those Vegan Cowboys, we are also working with Flecks Brauhaus Technik, Loki Foods, and the University of Iceland for more innovative developments in the future.
